Mackerel Linguine
Been away for some time but decided to put up another blog.I thought of something simple which only takes the time while the pasta cooks.
This serves three people....
Get a pot of salted boiling water and throw in 200g of Linguine....
First chop up half a chilli and one clove....
Fry off in a table spoon of rapeseed oil....
Throw in a tin of Mackerel and a table spoon of white wine vinegar....
Throw in three tablespoons of tomato passatta or home made tomato sauce....reduce this down....grate in half a lemon's zest and some chopped up curly parsley
After eight minutes you should have it thickened up....throw in the linguine
