Mackerel Linguine

Been away for some time but decided to put up another blog.

I thought of something simple which only takes the time while the pasta cooks.

This serves three people....

Get a pot of salted boiling water and throw in 200g of Linguine....

First chop up half a chilli and one clove....

Fry off in a table spoon of rapeseed oil....

Throw in a tin of Mackerel and a table spoon of white wine vinegar....

Throw in three tablespoons of tomato passatta or home made tomato sauce....reduce this down....grate in half a lemon's zest and some chopped up curly parsley

After eight minutes you should have it thickened up....throw in the linguine
