Sandro 'Beast' Chicken Wings
Hi everyone, I got on with another blog and thought today would be on Sandro 'The Beast'
As usual I had no response on Twitter lol So instead of doing a dish on his native Brazil I did beast chicken wings....they are 'beast' because I've spiced them up, obviously tone them down it you want? These can be kept in the fridge for three days and taste even better when they are letting the flavours mingle.
Here's the ingredients you'll need....
Preheat the oven to 170 degrees Centigrade
1kg of chicken wings (I have snipped the winglets off, and jointed the remain. Do this to all of them, it's easier to eat and cook.....and please remember to wash your hands and regularly clean down your work board unless you want to be sick!)
4-5 table spoons of All Purpose Seasoning
or
5 tbsp of Sweet Paprika
3 tbsp of Cayenne Pepper
3 tbsp of Dried Thyme
3 tbsp of Dried Oregano
Salt & Pepper
In a pestle & mortar smash up the dried thyme and oregano to a powder consistancy and add to a bowl with the other ingredients.
Now add the spice mix (BUT ONE TBSP FOR GLAZE) or All purpose season to a zip up bag and add the chicken wings that you prepared.
Add to the oven and cook for 18 minutes each side.
While these are cooking you can do the glaze which is
6 tbsp of Tomato Ketchup
6 tbsp of Worcester Sauce
1 tbsp of the mix or All purpose season if you can't be bothered
Salt & Pepper to taste
Now add the hot pepper sauce (any brand of choice) to taste
And mix it up....and when the chicken wings have had 18 minutes on both side or cooked (depends how your oven works) brush or spread it over one side and cook for 5 minutes and do the same again....and here is how they can look?? Yours will obviously look better :)
I also did an avocado dip for chips, it's easy...
1/4 red onion
One Jalapeño green chilli
One ripe avocado
Lemon Juice
Salt & Pepper
Add the red onion and half the Jalapeño into a pestle & mortar and smash it up
Add the avocado and smash it up
Add the Salt & Pepper....and the Lemon juice (this is to stop it colouring....and obviously give it a acidic kick)
Mix it up and serve....
You can add a little Cilantro/ Coriander but I didn't.....
Anyway this was a very simple one....but no point making it difficult.
