#spicetrail Cauliflower Cheese Pasta Bake

Hi everyone,

Another Spice Trail has arrived and I thought that this week was a bit of a challenge!
Carraway Seeds! Many would say baking, but being me I wanted to go against the normality!
So I went for a family favourite Cauliflower Cheese Pasta.

Here is what you will need for four people as a main meal.


4 slices of Streaky Smoked Bacon
One large Leek or Two small Leeks
One Large Spring onion
A few sprigs of Thyme
Half a red Onion
2 cloves of Garlic
Two teaspoons of Carraway Seeds 
200 ml of double cream
150g of strong grated cheddar
250-300 g of any pasta shapes
200 g of Cauliflower

 Pre heat the oven to 170 degrees


 Get a large pot of salted water on the go then start frying off the bacon and render the fat, add some Oil to get it going. Throw in the garlic, onions, Leeks and fry off for 8 to 10 minutes. Boil the Cauliflower while you are doing this,

Add a tablespoon of Carraway seeds and let the heat release the perfumed flavour. Take the Cauliflower our and place into a food processor (add some of the water if you need to loosen it) and season.


Pour the cream into the pan and add 75g of the grated Cheddar. Throw in the Cauliflower and combine. Now add the pasta and cook for half of the packets instructions.


Throw in the pasta (depending on the cooking time and throw in a splash of the cooking water if you need to loosen it, check for seasoning? Now transfer to a oven proof dish.


Put tin foil over it and cook for 30 minutes and remove the tin foil for the next 10 minutes. Leave to cool for 20 minutes before serving. Add a salad if you

When I tried this I feel the Carraway seeds cut through the cheese and compliments the Cauliflower as well as the sweet onions with the smoky bacon as it gives a subtle hum to the dish. I can see why it's used in stir fries and ginger bread as it gives another note of flavour which cuts through most powerful flavours to add another dimension. And remember add more Carraway seeds if you wish.
